The Dish: Cantonese Style Florida Shrimp

12 Florida Shrimp, head on
2 oz. butter
1 clove garlic, minced
1 Tsp. ginger, grated
1 Tbs. shallots, minced
1 Tsp. chili flakes
2 oz. rice wine
2 oz. chicken stock
pinch chives, chopped
zest from 1 lemon
1 oz. olive oil
sea salt to taste

Method of Preparation:
– Put olive oil in a hot pan. Add butter and a mixture of minced ginger, garlic and shallots. Sauté for a minute or so.

– Season the shrimp with salt and add it to the pan. Turn the shrimp now and then so they cook evenly. Leave the heads on. Chef Michael says that’s where all the flavor is!

– Add dried red chili flakes and rice wine. Sauté another minute or so and add julienned lemon zest and chives-

To Plate:
– Chef plates the shrimp with the pan juices and adds more chives on top.
