(WSVN) - Chef Jeff McInnish of the Sarsaparilla Club on South Beach says beets are an under appreciated vegetable.

Chef Jeff McInnish: “They’re full of sugar. I think that’s one thing people don’t realize is that they can be really sweet. When they’re treated properly, they have tons of flavor.”

There are lots of ways to prep them.

Chef Jeff McInnish: “You can throw the whole beet into the oven raw on a sheet pan with oil salt and pepper. It will shrivel up and it makes it easy to peel that way.”

Or, you can cut the ends and peel them raw with a vegetable peeler.

Chef Jeff McInnish: “It is a root vegetable and it’s grown underground, so if you’re not going to peel it, you better scrub it really good.”

When they’re peeled, dice them into cubes and they’re ready to steam or sauté … and it only takes minutes. Beets are simple to prepare, and they’re delicious and full of vitamins!
