It’s so hot outside. Wouldn’t it be nice to cool down with a frozen dessert? Sounds great to me. That’s what’s on the menu today as we grab a Bite with Belkys.

Ingredients:
3 bananas, ripe and sweet but still firm (if too ripe, it will be mushy and hard to work with)
1/4 cup of your favorite peanut butter
10 oz. dark chocolate chopped. You can also use chocolate chips.
2 tsp. coconut oil (makes chocolate easier to melt and set)

Method of Preparation:

  • Cut banana into 1/4 inch slices. Set aside half of the slices and arrange the other half on a baking sheet lined with parchment paper.
  • Heat peanut butter in the microwave on low/medium for about 30 seconds to a minute, stirring until it’s smooth and easily spreadable.
  • Spoon about a 1/4 tsp. peanut butter on the banana slices that are arranged on a baking sheet. Top with another half of banana to make a sandwich. Freeze bites for two hours. When they are frozen, prepare the chocolate.
  • Place chopped chocolate (or chocolate chips) in a microwave-safe bowl along with the coconut oil.
  • Microwave on low/medium heat in 30-second bursts, stirring in between until chocolate is fully melted and glossy.
  • Prepare another baking sheet or a plate with parchment paper. Take two to three of the bites at a time out of the freezer. One by one, dip them in the melted chocolate, covering all sides. Remove excess chocolate and place on prepared baking sheet. Repeat with remaining frozen sandwiches. Place the chocolate-covered bites back in the freezer until set. Once they are set you can transfer them to a container and store in the freezer.
  • If your teeth are sensitive to cold, take them out of the freezer a few minutes before serving.
