Simple, easy and tasty — what more can you want in a main course meal? That’s what’s on the menu as we grab a Bite with Belkys.

Ingredients:
2 tbs. olive oil
2 large cloves garlic, minced
1 five ounce can of good quality albacore tuna, packed in oil and drained
1 lemon (for fresh juice and lemon zest)
1 tbs. fresh parsley, chopped
salt and pepper to taste
4 ounces pasta (we used spaghetti)
Parmesan cheese for garnish

Method of Preparation:
Boil a salted pot of water for the pasta. Cook al dente according to the package instructions. You can use any kind but we
like spaghetti for this. Prep your other ingredients while the pasta is cooking.

When the pasta is close to being ready, add the olive oil to the pan over medium heat. Once the oil is hot, add the garlic and cook for 30 seconds.

Stir in the tuna, lemon juice and parsley. Stir well and let it heat through.

Once the pasta is done, add some of the pasta water (2-3 tablespoons) to the sauce. Add more if you like your sauce thinner.
Drain the pasta and add it to the the tuna and sauce and toss well. Season with salt and pepper, parsley and lemon zest. Toss again.

Serve it up with freshly grated Parmesan cheese and enjoy!!
