The Dish: 5-Grain Tacu Tacu
Ingredients:
Tacu Tacu Cakes
4 oz. cooked long grain rice
4 oz. cooked quinoa
4 oz. cooked black beans
2 oz. cooked barley
1 oz. flaxseeds
1 diced red bell pepper
1 yellow bell pepper
1 tsp. ground oregano
1/2 tsp. ground cumin
1 tbsp. kosher salt
1 tbsp. chopped Italian parsley
*Create approx 5 oz. cakes
Curry Coconut Sauce
2 diced yellow peppers
1 diced Spanish onion
1 tsp. chopped ginger
1 piece lemon grass
1 tbsp. ground curry
1 tsp. ground turmeric
Kosher salt to taste
3 small cans of coconut milk
Method of Preparation:
– First, make the sauce. In a hot pan add soybean oil, Spanish onions, yellow bell peppers, lemon grass and ginger. Let it sweat a few minutes. Add kosher salt, curry, turmeric and bay leaves- sauté and stir. Add coconut milk. Turn down the heat and cook for 25 minutes to reduce.
– For the Tacu Tacu cakes, add cooked ingredients: quinoa, white rice, farro, barley and black beans.
– Add flax seeds, kosher salt and chopped red, yellow and green peppers. Blend well. Work the mixture with your hands, squeezing and mashing up the beans; they’ll act as glue to help hold the cake together.
– Add parsley and cumin and then shape the cakes- just like you would a hamburger. Put it them in the fridge for several minutes to firm up.
– Back to the sauce. Put it in the blender. When it’s thoroughly blended, strain and put the sauce back in the pan and on the stove to simmer.
– Put the Tacu Tacu cakes on the grill and cook on both sides for several minutes, until they’re golden brown.
To Plate:
Chef Horatio plates first with the curry coconut sauce, adds mixed grilled vegetables, more sauce and a Tacu Tacu cake. He garnishes with pea shoots and microgreens.
