1/2 cup of maple syrup2 cups of molasses1 Tbs of black pepper8 oz. berkshire bacon slabcanola oil2 fennel bulbs, sliced thin1 green apple, julienned1/4 cup of mayonnaise3 Tbs of rice wine vinegar
Method of Preparation:
-Start by preparing a rub. In a bowl, combine maple syrup, molasses and black pepper.
-Then, marinate the bacon slab with the rub. For extra flavor you can marinate it overnight.
-Next, bake the bacon in a 375 degree oven for 20 minutes. Once it cools, cut it into thick slices. After, sear the bacon slices in a hot pan with a drizzle of canola oil. Finish the bacon by placing it back in the oven for another three minutes.
-Now, for the slaw simply mix fennel, green apple, mayonnaise, rice wine vinegar and a pinch of black pepper.
You can garnish with micro greens or cilantro.
